Course Information
Description Study of purchasing and inventory management of foods and other supplies to include development of purchase specifications, determination of order quantities, formal and informal price comparisons, proper receiving procedures, storage management, and issue procedures. Emphasis on product cost analysis, yields, pricing formulas, controls, and record keeping at each stage of the purchasing cycle.
Required Textbooks Textbook Purchasing Statement: A student attending Lamar State College Port Arthur is not under any obligation to purchase a textbook from the college-affiliated bookstore. The same textbook may also be available from an independent retailer, including an online retailer.

Learning Outcomes Emphasize and execute the managerial duties of purchasing.
Execute the function of purchasing as it is intertwined with other related duties of a hospitality manager.
Identify product specs, read invoices, select and properly identify products. Use conversions.
Procure products, identify supply chains, evaluate sourcing.
Use technology and sustainable practices in purchasing.

Course Policies
Instructor Policies I will not discuss your grades over the phone or by e-mail. If you want to discuss your grades, you must make an appointment and come to my office in person.

Due dates are given and enough time is given to complete all work. No make-up work unless approved.
 
There will be a practical final exam in the kitchen. All students must take the exam on the scheduled date and time, and failure to do so will result in a 0 on the final exam.
 
Every student MUST have a copy of the required textbooks by the SECOND week of class. The student will still be responsible for any assignments given. Failure to have a text may result in being dropped from the class.
 
No emailed work is accepted. All work is in Blackboard.
 
A failure to follow oral and/or written instructions will result in penalties.
Academic dishonesty will result in a zero on any assignment; a second incidence of academic dishonesty will be handled based on campus policies and procedures with the department chair.

COVID 19 Information The Lamar State College Port Arthur (LSCPA) Student Code of Conduct COVID 19 Policy requires students who have been diagnosed with COVID 19 to report their condition directly to their local health department. Students should also contact their course faculty to report their quarantine status. In addition, this policy requires all students to wear face coverings when directly exposed to COVID 19 in compliance with the criteria included in the policy. Facility Policies No food or tobacco products are allowed in the classroom. Only students enrolled in the course are allowed in the classroom, except by special instructor permission. Use of electronic devices is prohibited.
